Sydney is home to many fabulous bars and restaurants that hold powerful status on the culinary map. Some of the greatest fine dining restaurants in Sydney, like Aria and Restaurant Hubert, are highly celebrated and world-famous. People fly all over just to see if some of these great bars and restaurants live up to the hype, and deserve the price tag.
Glass Brasserie is Sydney’s hidden gem. Located in the central business district inside the Hilton Hotel, the restaurant is based on the second level where guests can view the busy and vibrant George Street and people-watch the genuine culture of Australia’s most cosmopolitan city.

The ‘upscale modern Australian’ menu offers some of the essential classics you find in most fine dining restaurants – and to an exceptionally high standard. Going down the list of menus, you can choose to have caviar and/or oysters. The Black Pearl Caviar Siberian Osetra is from Poland and comes at $85 for 10 grams and $145 for 20 grams.
The cheese selection is an array of exquisite cheeses, most of them from France. A beautiful cheese to try at Glass Brasserie is the lovely and light Tête De Moine AOC from Jura, Switzerland. One of the stand-out cheeses though is from West Country, England – the Quicke’s Extra Mature Cheddar.
There is also a degustation menu that offers a number of plates, a selection of cheeses, dessert, tea and coffee, and matching wines. One of the tasting dishes that truly stand out is the Fillet, Riverina NSW, pepper crust, pumpkin, onion jam, potato, king brown mushroom.

What’s on at Glass Brasserie? There is a ‘Charlie and the Chocolate Factory’ pre-theatre menu available Wednesdays to Saturdays. In celebration of the Charlie and the Chocolate Factory musical playing at Capitol Theatre until July, Glass Brasserie has partnered with the theatre to give theatre guests and dinner guests a delicious feast of wonderful mains and an exciting dessert to set them in the mood for what’s to come. One of the standouts in the menu is a chocolate-themed alcoholic beverage – the white chocolate and almond cocktail.
Some of the weekly events that take place at The Glass Brasserie is the ‘Sunday Sharing Feast’ designed for a “cheeky date night”, and the ‘Bottomless Late Buffet Breakfast’ that are set up for Saturdays. At the buffet breakfast, you can enjoy sipping on bottomless mimosas and Bloody Mary’s from 10 in the morning until 2:30 in the afternoon.
And lastly – for a limited time only – celebrity Chef David Rayner is collaborating with Mangan in creating fresh seafood add-ons to the restaurant’s current menus.
