Three Michelin starred restaurant Single Thread will bring its celebrated farm driven dining experience from California to Sydney for a limited residency at Bathers’ Pavilion. The collaboration promises a deeply immersive tasting menu shaped by local Australian produce and Japanese inspired techniques. With limited seats and global acclaim behind it, this is set to be one of Sydney’s most anticipated dining events of 2026.
A World Renowned Dining Experience Arrives in Sydney
For four weeks only, Sydney’s dining scene will host one of the most acclaimed restaurants in the world. Single Thread, the three Michelin starred restaurant based in Sonoma, California, will take over the kitchen at Bathers’ Pavilion from Tuesday July 28 to Sunday August 23, 2026. The collaboration continues Bathers’ Pavilion’s growing reputation as a destination for international culinary residencies, following its highly successful partnerships with L’Enclume in 2023 and 2025.
These previous events drew extraordinary demand, with waitlists exceeding 2000 bookings. The 2026 residency signals not only the appetite of Australian diners for world class experiences, but also Bathers’ Pavilion’s long term commitment to cultural exchange at the highest level.

The Philosophy Behind Single Thread
Recently named joint number one restaurant in the world by La Liste, Single Thread represents the pinnacle of contemporary global dining. It is led by husband and wife team Kyle Connaughton, executive chef, and Katina Connaughton, head farmer.
The restaurant is located in Healdsburg in Sonoma wine country and is anchored by a 24 acre farm in Dry Creek Valley. This working farm includes greenhouses, heirloom orchards, beehives and an expansive floral program, all of which shape the menu, aesthetic and rhythm of the dining experience.
Single Thread’s cuisine blends hyper seasonal Californian produce with the refinement and philosophy of Japanese cooking. This approach has been shaped by Kyle Connaughton’s international career, which spans Los Angeles, Japan and the United Kingdom, including time working under Heston Blumenthal at The Fat Duck and alongside Michel Bras in Japan. These experiences underpin a philosophy grounded in precision, discipline and a deeply guest focused ethos.
Recreating the Experience at Balmoral
For the Sydney residency, the Single Thread team will relocate بالكامل to Balmoral Beach, working closely with the Bathers’ Pavilion team to deliver an experience that reflects both restaurants. This is not simply a replication of the Sonoma flagship, but a carefully considered adaptation designed to create a sense of place.
At the heart of the experience is Single Thread’s signature Hassun. This kaiseki inspired seasonal introduction features up to 10 individual bites, often harvested on the same day, and presented on an intricate arrangement of florals. Designed to tell the story of the day, it sets the tone for the courses that follow and offers diners an immediate connection to the ingredients and the environment.
A Menu Shaped by Season and Place
Guests will be served a 10 course tasting menu priced at 690 dollars per person, consistent with the experience offered in Sonoma. The menu will be tailored to dietary requirements where possible, with advance notice, and will highlight the same meticulous attention to detail that defines Single Thread’s global reputation.
Wine will play a significant role in the experience, with four bespoke wine flights curated by Single Thread’s beverage director Chris McFall. These pairings will be available for pre selection or can be chosen tableside on the evening, allowing diners to personalise their journey.
While the core philosophy remains consistent, the Sydney menu will naturally reflect local conditions and ingredients, creating a dialogue between Californian and Australian produce.

A Meeting of Culinary Minds
The collaboration represents a true partnership between the two teams. Bathers’ Pavilion continues to position itself as Australia’s leading platform for international culinary exchange, bringing some of the world’s most respected kitchens to Sydney’s shores.
This shared commitment to excellence ensures that the residency is not just a visiting performance, but a meaningful collaboration that benefits both teams and delivers a richer experience for guests.
What to Expect from the Residency
The experience has been designed to feel both exclusive and immersive. Guests will have their table for the full duration of the service, with no limited seating times, allowing the meal to unfold at its intended pace.
Each booking includes a take home gift and access to exclusive post event opportunities, including a residency shop. The entire experience is positioned as a moment in time, something that will not be repeated in the same way again.
Reservations require full prepayment and are non refundable, reflecting the nature of the event. As with major cultural experiences such as theatre or concerts, this ensures commitment while maintaining the integrity of the limited offering.
High Demand and Booking Details
Given Single Thread’s global reputation and the success of previous residencies, demand is expected to be extremely high. Bookings opened at 10am on Thursday March 12, 2026, and are available via the Bathers’ Pavilion website or by phone.
The residency will run from Tuesday to Sunday each week, with both lunch and dinner services available. With limited capacity and significant international interest, securing a reservation is likely to be highly competitive.

A Moment in Time
What makes this residency particularly compelling is its temporary nature. For just four weeks, one of the world’s most celebrated restaurants will exist in a completely different setting, shaped by a new environment and new ingredients.
This sense of impermanence is central to its appeal. It is not just a meal, but an experience defined by time, place and collaboration. For those who attend, it offers the chance to witness a unique intersection of culinary philosophies at the highest level.
Looking Ahead to July
As the opening date approaches, anticipation continues to build across Sydney’s dining community. The arrival of Single Thread marks a significant moment, reinforcing the city’s place on the global culinary stage.
From the opening Hassun to the final course, every detail has been considered to create an experience that is both deeply personal and globally significant. For those fortunate enough to secure a booking, the residency promises not just a meal, but a lasting memory.
