For over two decades, Vue de Monde has been synonymous with the pinnacle of Melbourne dining, combining luxury with a commitment to authenticity and innovative flavours.
Founded by Chef Shannon Bennett in 2000, Vue de Monde began its journey on a quaint terrace on Drummond Street, Carlton, before making a transformative move to the historic Normanby Chambers in 2005. This relocation marked a pivotal shift towards a more theatrical and experiential approach to dining, propelling Vue de Monde into the international spotlight.
It was in 2011 when Vue de Monde ascended to new heights, quite literally, with its relocation to the 55th floor of the iconic Rialto building, offering breathtaking panoramic views of Melbourne’s cityscape. Designed by Elenberg Fraser, the venue was meticulously crafted to evoke the essence of the Australian landscape, from its rough black basalt bar to the iconic kangaroo fur chairs by Ross Didier.
Under the visionary leadership of Executive Chef Hugh Allen, Vue de Monde continues to push boundaries. Hugh’s culinary journey began at a tender age, honing his skills with the Rockpool Group and eventually earning acclaim as the 2015 Gault Millau Young Chef of the Year. His global adventures, including stints at Noma in Copenhagen, have enriched Vue de Monde’s menu with a refined and inventive use of local and native ingredients.
Alongside Chef Allen, General Manager Hugo Simões Santos ensures that every aspect of the Vue de Monde experience exceeds expectations. Hugo’s background spans esteemed establishments like Gordon Ramsay’s and Dinner by Heston in London, bringing a wealth of hospitality expertise to Melbourne’s vibrant dining scene.
Central to Vue de Monde’s allure is its deep commitment to sustainability and ethical dining practices. From sourcing ingredients from local suppliers to employing cutting-edge kitchen technology for minimal environmental impact, Vue de Monde sets a high standard for culinary responsibility.
At the heart of the Vue de Monde experience lies its meticulously curated wine program, overseen by Master Sommelier Dorian Guillon. With a collection boasting 2000 bins from Australia and beyond, Dorian and his team elevate each dish with pairings that reflect the unique terroir of each wine.
Beyond its culinary prowess, Vue de Monde is a haven for art enthusiasts. Curated in collaboration with Anna Schwartz, the restaurant hosts a notable collection that complements its sophisticated interior, making dining here not just a meal but a cultural journey.
Today, Vue de Monde stands as a symbol of fine dining and a testament to Melbourne’s vibrant culinary scene. Through its steadfast commitment to excellence, sustainability, and creativity, Vue de Monde constantly pushes the boundaries of dining, providing an extraordinary experience that delights the senses and enriches the spirit.
